how to convert nmap output between formats

What is the easiest way to convert to/from XML to/from normal and
grepable output?

And Zenmap's output format, too. Or is that just the XML format with
a different extension on it?

Zenmap's format (USR, "Umit Scan Results") is just Nmap XML with extra
attributes in the root nmaprun element, which record things like the
profile name and the stdout of the Nmap scan.
